What exactly is a “Summer Salad”? I have no idea. That’s a great question. But, this seems like the kind of thing that would qualify as a “Summer Salad,” on account of the fact that all of the ingredients are fresh during the summer, and also I’m going to eat it while it’s summertime. Justified enough for me, lets move on.
I started with:
-tomatoes (that I picked from my garden!!)
-cheese (I used white cheddar)
You will also need:
Cut your ingredients, and arrange them as you like.
Then, boil the chicken in salted water. Chill and shred the chicken, and toss the chicken with a healthy dose of olive oil. Then add torn parsley leaves, and place amongst the veggies.
You’ll notice that I didn’t use a dressing, at least not in the traditional sense. I grabbed a lemon, squeezed it over the top of salad, and then tossed all of the ingredients together. Between the olive oil from the chicken, and the lemon juice, it coated the veggies in a “dressing,” but it keeps everything tasting really fresh and light. Definitely a good way to go during the summer.
